A Liminal Feast to Winter

We’re happy to announce the first ever Liminal Feast, an artful meal marking the point between two seasons. This first one will be to winter, made of the bright spot of sideways light before the year’s shortest days.

Local game, city-grown herbs and flowers, and a tramp through the woods will be our starting point. We hope you’ll join us!

These little treats are gluten free Almond cookies. I am playing with gluten free recipes and every one wants a sweet on Valentines day including those that react to gluten and refined sugars…… I used coconut oil but butter would be even better . I used coconut oil because I am recipe developing for those around me who don’t tolerate dairy as well…..oy.
This recipe tastes like a cross between marzipan and a fluffy almond cake. It is a also a quick , child friendly , gluten+ sugar free cookie.

My favorite of the toppings is the cacao nib- crunchy little bits. Sylvain agrees .

Almond cookies
Makes 2 doz cookies
1/3 cup coconut oil @ room temp
2 c Almond meal
3 T ground flax
1/2 cup Agave syrup
1 egg
1 tsp vanilla
1/4 tsp Baking soda
1/4 tsp cream of tartar
2 tsp Meyer lemon zest
Toppings: raw cacao nibs ground hazelnut cinnamon coconut
Beat coconut oil with whisk for 30 seconds. Add 1/2 almond meal and the rest of your ingredients. Add rest of almond meal. cover and chill for a few hours until batter tightens.
Pre heat oven 350 F. Place your toppings on plates. Roll little balls and roll in the topping of choice. Place on parchment paper on sheet tray. Give the slightest push on the top.
Bake for 15-20 minutes- golden brown but still pale towards the center.
